Two Point Chili PointsPlus: 2 per cup
INSTRUCTIONS
10 oz uncooked ground turkey breast 1 medium onion(s) 2 medium zucchini 2 medium yellow summer squash 15 oz canned black beans 4 large stalk celery 2 bell pepper(s) 1 1/4 oz Durkee Chili Seasoning Dry Mix 30 oz Health Valley Fat-free beef flavored broth no salt 56 oz canned diced tomatoes
1. Spray a large nonstick skillet w/nonstick spray and set over medium-high heat. Add the turkey and onion and saute until browned, about 5 minutes.
2. Transfer the browned turkey and onion mixture to a large soup pot and add the tomatoes, zucchini, , squash, beans, broth, celery, bell peppers, and chili seasoning.
3. Bring to a simmer over medium heat. Continue to simmer until the vegetables are tender, about 30 minutes.
Makes 20 Servings.

I like to add a 15-oz can of pumpkin puree (NOT pumpkin pie filling!) to my chili. Sounds weird - but you don't really taste it, and it gives the chili a thicker consistency (without adding any points).
ReplyDeleteI made the chili today, substituting Tex Mex Chili Seasoning (for a little more spice), then blended it lightly after cooking to thicken it. Add an once or less of cheddar to the bowl and it's fantastic.

I would imagine the Tex Mex Chili Seasoning mix is the same as what I used as far as the POINTS, adding cheese will add to the POINTS per serving (as you probably know).
This is soooo good. I always have some of this chili in my fridge or freezer. An easy dinner!
